Mmm… I love corn on the cob!  

It’s best when it’s fresh picked and sweet (or peaches and cream) and BBQ ready.  I like using the BBQ as you can roast it and it adds a nice, slow cooked flavour.  Speaking of flavour.. let’s see what we can butter it up with!

Enjoy these delightful summer buttery toppings the next time you serve up the season’s gold!

Grill 6-12 cobs of corn after washing thoroughly – keep in the husk if you wish to keep it nice and tender.

 

TOPPINGS that are MIXED with PURE, Fresh BUTTER:

 

Butter and Olive Oil:  with fresh ground pepper and coarse sea salt.  Add a sprinkle of dried parsley.

Tex-Mex:  Mix softened butter with taco spice and brush over corn.  Squeeze fresh lime juice on before brushing. 

Honey-Garlic:  Mix very soft butter with a natural honey and fresh, finely chopped garlic.

Maple-Cinnamon:  Mix 1/4 cup maple syrup into very soft butter and add 1/2 tsp. cinnamon. Brush over corn.

Dill & Chive:  Mix soft butter with fresh chopped chives and finely chopped fresh dill.  Brush over roasted corn.

Smoked Paprika-Oregano:  Brush corn as it’s roasting on BBQ with olive oil and butter – mix smoked paprika and oregano together and sprinkle over corn as it finishes roasting.

India-Spice:  Mix 1/2 tsp. each of curry, dry mustard, turmeric and cumin into room temperature butter.  Brush over corn as it’s roasting.  Blend any leftover spice into a dish of olive oil and use as a dipping oil.

Basil-Chilli-Mint:  A little heat and chill in this buttery brushing – mix fresh chopped basil and mint leaves with chilli powder, fresh chilli’s or any kind of chilli’s you wish (for heat) into soft butter.  Brush over roasting corn.  Top with some leftover chopped mint and serve.
