It’s PEACH Season and this time of year tastes great as the trees burst with sweet, juicy peaches! This recipe uses a couple drops of pure essential ORANGE oil to zest up the flavour, but if you don’t have essential oil of orange, use some orange zest to your liking.

Try this refreshing version of a chilled peach soup served along with fresh grilled BBQ fare such as chicken, grilled asparagus and zucchini or steak and grilled vidalia onions and peppers.

ENJOY the fruits of the season!

SUMMER CHILLED PEACH SOUP:

3 large, ripe peaches, peeled, pit removed and chopped
1 cup plain or vanilla organic yogurt
1 1/2 cups english cucumber, peeled and chopped
2 tsp cinnamon
1-2 drops orange ESSENTIAL OIL (I use Young Living Oils)
1 tsp fresh minced ginger
1/4 tsp sea salt
2 tablespoons fresh fine-chopped mint leaves
2 tablespoons light extra-virgin olive oil
1/4 cup chopped pecans

Put peaches, yogurt, cucumber, fresh ginger, cinnamon, and sea salt into a blender or food processor and blend until creamy and smooth. While blending on low, drizzle in olive oil. Place mixture in a glass bowl and cover, chilling for at least 2-3 hours. When chilled, serve in chilled bowls with fresh chopped mint and a sprinkle of chopped pecans on top. Add a dash of cinnamon on top as well to make it pretty.
