Avocado Breakfast Boats
I love avocados. They are so versatile and fun. They are also kinda weird… what do you do with them? I know I can convince you to try them, but they have to be just perfectly ripe though, or you’ve got yourself into a squishy mess. Let’s see what we can do with them when they’re NOT a squishy mess:
- They can be used to jazz up a salad (dice it up), on top of a chilli (dice again), on a hamburger or a wrap (here is where a slice is nice). Throw one into your smoothie or bake some into muffins for added fat (they are called “monounsaturated fats” or just simply GOOD fats)
- Top a gluten-free pizza crust with some homemade tomato sauce, sliced sundried tomatoes, fresh chopped basil, a sprinkle of dried oregano, one small diced avocado and sprinkle with a mix of parmesan and a natural cheese or feta cheese for a special treat.
- Mash up some avocado and mix with fresh chopped flat leaf parsley, finely chopped red onion, a dash of hot sauce and some fresh squeezed lime and make guacamole – dip with spicy bean chips to mix up the flavors.
- Or slice a few thin layers of avocado and slip between a buffalo mozzarella and carmelized onion grilled cheese…
So, now you like avocados… told ya!
Or, make breakfast in a boat! This pic shows a yummy all-natural (no nitrates) smoked ham and egg scramble with a little stack of grated cheese – served up in a hollowed out avocado. Makes for a nice presentation for brunch or a delicious way to have breakfast for dinner:
2-4 organic eggs
2 avocados – ripened and split (remove seed)
4 slices natural, nitrate free, low sodium ham or bacon
parmesan, Monterrey Jack or Buffalo Mozzarella – shredded fine
(add onion, parsley, chives, finely diced red pepper, and a few mushrooms (if you like spongy-tasting things…)
Cook eggs and veggies. Spoon into hollowed avocados. Top with cheese of choice. Sprinkle with some paprika to make it really colorful and tasty.
Sail away…
Avocados are great for dialing down high cholesterol because these fats are the good ones. These “good” fats help your body absorb your other fat-soluble nutrients like vitamins A, D, E and K from other foods (think…serve with some dark leafy greens). These little gems are low in fructose (fruit sugar) and pack a powerhouse of potassium and folate – good for Mom’s to be.
