Watermelon is so much fun!  You can do so many things with this amazing fruit and here we’ve made a cool summer soup that’ll help you chill on a hot, sunny day!   Enjoy!

Watermelon Gazpacho

Serves 4.

1 cups diced watermelon
2/3 cup garden cocktail juice (no salt added)
1 green onion, chopped fine
1 stalk of celery, chopped
1/2 yellow bell pepper, seeded and chopped
Dash of Tabasco or a bit more to taste
Salt and pepper to taste
Grated fresh cucumber and diced watermelon – as garnish.

Put all ingredients into a food processor and pulse until finely chopped. Serve cold in bowls topped with grated cucumber or diced watermelon.
