Chill out on these HOT HOT HOT Summer days with a healthy, sweet treat – even kids will love! You don’t have to tell them there is baby greens, yogurt and other “healthy” things in them.
Make in any flavour of fresh fruits you wish… I’ve used strawberry and blueberry here, but go WILD with peach and vanilla, watermelon and raspberry, banana and dark chocolate chip, mango and pineapple with mint leaves… Ahh…
CHILL OUT SUMMER ICICLES
1 cup plain or vanilla organic yogurt
1.5 cups baby greens such as kale, spinach, or both
1 tbsp. fresh chopped mint (finely chopped)
1 small banana
1 tbsp. lemon juice fresh squeezed
1/2 cup sliced fresh strawberries
1/2 cup frozen/fresh wild blueberries
1 tsp. pur vanilla extract
1 tablespoon local, organic, unpasturized honey
BLEND all greens in a little water in blender and add yogurt, berries, banana and blitz well. Add lemon juice, vanilla, honey and IF DESIRED, ONE drop of orange or citrus, or lime ESSENTIAL OILS (I use Young Living Essential Oils). Blitz in blender again until very smooth.
Pour into your own popsicle molds and freeze for 6-8 hours.
