SUMMER tastes GREAT on the BBQ!


Try these Chili-Lime Steak Tacos for a new twist on your weekend BBQ menu.


1-2 pounds Grilled Steak such as sirloin, NY strip or cut of choice

1 of each (Red and Orange and Yellow) peppers, chopped in large pieces and tossed in olive oil

3 fresh limes, juiced

1/4 tsp. Sea Salt or Pink Himlayan Salt

1/4 -1/2 tsp. fresh chili powder

Fresh Ground Pepper to taste

1/4 cup olive oil

4 tsp. grated fresh garlic

1 cup baby spinach or arugula

1 cup diced cucumber

1 cup baby cherry tomatoes diced

1 cup diced avocado

1/2 cup fresh cilantro leaves

10 corn tortilla, grilled to heat

6 -12 cobs of fresh corn – grilled or steamed on BBQ



Rub steaks with olive oil, Salt and Pepper.  Grill as desired.

Grill peppers by laying over grill and turn once when tender, making sure there is grill marks. Remove from grill and slice into strips.  Keep warm in a side dish – reserve for tacos.

Mix olive oil, chili powder, lime juice and garlic together. Spread this mixture over the steaks as they grill.  Save a little of this mixture for after steak is cooked to your liking.  We are using it for the corn.

Remove steaks from grill and let set for about 10 minutes.  Then, slice steak into strips and toss in a bowl with remaining lime juice and spice mixture.

Add sliced steak to each tortilla, and top with cucumber, avocado, baby greens, tomatoes, cilantro and sliced grilled peppers.


Steamed or Grilled.  Take remaining chili-lime and spice mixture and blend with some softened butter.  Mix well and paint over the corn on the cob as it’s removed from grill.  Serve with tacos!
